Helen Von Stein Lamb's Ears, also known as Stachys byzantina, is a low-maintenance beauty that is so velvety and soft-looking that you may want to pet it, and that’s fine. Large, elliptical foliage is a silver-green hue and gently rounds to a point. The leaves have a soft suede look, and the midrib and evenly spaced veins provide subtle texture.
